When you hit that downhill the heavy load is gone and it will cool right off. Go to your local Napa and ask for a block checker.

I would recommend lowering the Jeep to 2.5-3.5 inches of lift unless you are prepared to do a lot of extra work to make 6 inches of lift comfortable. Fast forward to today (no incidents for the last couple of weeks), and it kicks on while I'm going about 40mph. X2, that problem is typically caused by a bad fan clutch causing the fan to not pull enough air through the radiator when you're idling/sitting still. Well if it's your AC that causing you to overheat then to me that means your cooling system is marginal and the increase in heat load from the AC is overloading it. Start as instructed above and see where you are coming up short.
